Hello coconut lovers, today is your happy day because I am making healthy coconut and almond macaroons . These bad boys might be small, but the pleasure and nutty flavour they’ll give you will be huge! They are crispy on the outside and deliciously chewy on the inside. They are gluten free, grain free, paleo friendly, no refined sugar and only full of good stuff.

Most people try to stay away from eating nuts because of the high fat content, but these fats are good unsaturated fats. Nuts are full of nutrients that help to satisfy your hunger on fewer calories. A handful of raw nuts as a snack food is completely satisfying and the protein and fat not only curbs the cravings and hunger, but give lots of energy too. They contain potassium, magnesium, iron, zinc, vitamin E, copper, calcium, selenium and copper, so go nuts for nuts and enjoy! For the coconut and almond macaroons I have used desiccated coconut, but you can use shredded and flaked coconut too.

As for the sweetener you don’t have to add anything, because there is a gentle sweetness coming from the coconut, however I added ⅓ cup of coconut sugar just to make it even more irresistible . If coconut sugar doesn’t tickle your fancy use ¼ -⅓ cup of raw honey. And if you are feeling extra naughty you could dip these macaroons in melted raw chocolate or dark chocolate chips (sugar-free) for a tasty treat. They are so easy to make , get your little ones involved. My Sofia loved whisking the eggs and doing the final tasting test. After all, I made them for her.

Healthy coconut and almond macaroons

These gluten free healthy coconut and almond macaroons recipe is the perfect treat or for that pick me up moment.

Ingredients

  • 2 eggs or 4 egg whites
  • 1 cup ground almonds
  • 1 cup desiccated coconut
  • 1 teaspoon vanilla extract (go for the non-alcohol version)
  • ⅓ cup coconut sugar or any of your favourite sweeteners (optional)
  • Optional:
  • Few drops of almond essence
  • Few squares of raw chocolate, melted

Instructions

  1. Preheat oven to 175 degrees and line your baking tray (you might need 2 trays) with baking paper, then set aside.
  2. Place the eggs or egg whites in a bowl and whisk until stiff. If you are using whole eggs whisk until an almost stiff consistency.
  3. Fold in the coconut sugar, desiccated coconut then the vanilla extract, almond essence and ground almonds to form a sticky dough.
  4. Pop heaped teaspoons of the dough on a baking tray and bake in the oven for 15-20 mins or until slightly brown. Remove macaroons from the oven and let them cool down completely
  5. For the chocolate drizzle, just melt some raw chocolate with a touch of your favourite milk and drizzle over the tray.

These are ‘da bombs’, honestly. If you can’t get your hands on raw chocolate, you could drizzle them with my healthy chocolate sauce for which the recipe can be found here.
I hope you will love these as much as my family did! Eat them as soon as you can to enjoy the crispiness, they go a bit softer the next day. Luckily the whole batch didn’t make it to the next day in my house
