Hanukkah is a beautiful time of year full of celebration, tradition, and family. Fill your home with gorgeous recipes like homemade gelt, matzo ball soup, brisket, and more.

Ingredients

Vegan Noodle Kugel

  • 12 oz dry egg-free noodles (240 g)
  • 1 cup applesauce
  • ⅓ cup sugar
  • ½ cup raisins
  • ¼ cup vegan butter, melted
  • 1 tsp vanilla extract
  • 1 tsp cinnamon, ground
  • Pinch of salt
  • ¼ cup breadcrumbs
  • 2 tbsp vegan butter, melted

Instructions

  1. Bring a large pot of salted water to a boil and add the noodles. Cook according to package instructions, then drain and set aside.
  2. Meanwhile, preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  3. Combine applesauce, sugar, raisins, melted vegan butter, vanilla, cinnamon, salt, and the cooked noodles in a large bowl.
  4. Mix well and add some lemon zest for a twist if wanted!
  5. Pour the mixture into the prepared baking dish and spread it out evenly.
  6. Prepare the topping in small bowl by combining the breadcrumbs, 2 tbsp of melted butter, and a pinch of cinnamon.
  7. Sprinkle the topping evenly over the noodle mixture.
  8. Please in the preheated oven and bake for 40 minutes or until the top is golden brown and crispy.
  9. Allow it to cool for a few minutes before serving. Enjoy!

Notes

  • You can use currents instead of raisins.
  • Once cooled, noodle kugel can be stored in the fridge for up to 3-4 days or in the freezer for 2-3 months.
